Bio
Claudia Troisi is a PhD student in Agricultural, Environmental and Food Science and Technology at the University of Bologna (Italy). Currently she is a visiting scholar of Zhang Lab. Her research focuses on evaluating the frying performance of seed oils and oil blends through an integrated approach that combines chemical–physical analyses, instrumental techniques, and sensory evaluation.
